For your St Patrick's Day Table - Irish Soda Bread

This recipe is based on the Joy of Cooking recipe, with some of my own time-tested modifications:
Whisk together thoroughly in a bowl:
1 1/2 cups flour
4 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon orange zest (fresh is best)
Stir in:
1 cup raisins
2 teaspoons caraway seeds
Whisk together in another bowl:
1 egg
1 cup buttermilk OR a 50-50 combination of plain yogurt and regular milk
1/2 teaspoon honey
4 tablespoons unsalted butter, melted
A preheat the oven to 350. Grease a 6 cup loaf pan.
Add the wet ingredients to the dry and combine. Don't over-mix. Scrape the batter into a 6-cup loaf pan. Use a sharp knife to slash a large "X" about 1/2 inch deep on top of the batter. Bake until golden brown and a toothpick inserted in the center comes out clean, 45-50. Let cool in the pan on a rack for 5-10 minutes before unmolding to cool completely on the rack. Enjoy!
